Sweet Sunday- How are we doing it?

So you know that now we’ve been on the road for a few days. Trying to keep our weight and health under control and in good condition while on vacation may seem challenging, but it’s because it is challenging. And as of Tuesday, we’ll be receiving the added pressure of hometown favorite restaurants and going out with friends. Today I’ll share with you my “On Vacation Eats” list and what I bought and prepared before we hit the road.
Snacks (prep before leaving):
Cocoa covered almonds (recipe below!)
Oatmeal Butterscotch Cookies (recipe coming soon)
Leftover apple butter
Jam (plum, for sandwiches)
Oatmeal packets (homemade, just add hot water)
Skillet Biscuit mix (make at the cabin, recipe here)
Food to take (no prep required):
Fish batter (dry seasonings and corn meal for frying fish)
Guacamole and chips (bring avocados and pre-mixed seasonings)
Green tea (to avoid grabbing coffee)
Veggies to snack on
While on the road menu
PB&J sandwiches (not the most healthy, but full of energy boosting ingredients)
Egg salad sandwiches/wraps
Cheese and crackers
Now, check out the almonds!
Cocoa Covered Almonds
1/4 to 1/2 cup raw honey (however much you prefer)
pinch of salt
4 cups almonds
3 tbsp unsweetened cocoa powder
Preheat oven to 350 degrees. Line a baking sheet with parchment paper. In a saucepan, heat honey and salt over medium heat. Stir in almonds and continue to stir until almonds are completely coated. Spread the almonds onto the parchment paper lined baking sheet in one layer. Roast in oven for 10 minutes stirring occasionally to prevent burning. (Keep an eye on them!) Cool for several minutes.
Put cocoa powder into a gallon size zip-lock bag. Add the almonds to the bag and shake it around until the almonds are entirely coated with the cocoa powder. Add a little more cocoa if need be.
Now enjoy your semi healthy sweet snack! I know we’re enjoying it. Nom nom nom….
