Sweet Sunday- Oatmeal Butterscotch Cookies

When preparing for our road trip, I made a whole bunch of snacks because A. Our favorite thing to do in the car is eat and B. Anything we’d stop to get at a gas station is processed. With John diligently pursuing his no sugar, no processed flour ways, I’d really hate to have two weeks of eating poorly mess him up. Besides, eating poorly makes us feel bad now, so the extra effort of preparing snacks ahead of time is worth it!
Here’s some delicious healthified road trip cookies. And people, these were quite amazing, even with all of the healthy substitutes.
Oatmeal Butterscotch Cookies- HEALTHIFIED
3/4 cup butter, softened (Substituted 3/4 cup bananas)
3/4 cup white sugar (Substituted for 1/2 cup of raw honey)
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour (Substituted with all-purpose coconut flour)
1 teaspoon baking soda
1/2 teaspoon ground cinnamon (Added a little extra)
1/2 teaspoon salt
3 cups rolled oats
1 2/3 cups butterscotch chips (Reduced amount)
These are going to remain in close reach. Mmmmm…
